Philly Cheesesteak Omelette





Butter

Salt

Pepper

Beef chuck shoulder, sliced thin

Carne asada marinade

Mesquite marinade

½ or 1 whole Green pepper, sliced thin

½ or 1 whole small Onion, sliced thin

4-5 mushrooms, sliced thin

Eggs for scrambling, as many as you want

Half and half, optional and to the amount that you like scrambled in your eggs 

Cheese of choice, sliced American cheese or any cheese you like





Start by slicing your beef chuck shoulder, or whatever meat you have around.  If using beef, slice against the grain of the meat to get more tender cuts.  You can tell the grain of the meat by slicing a part off and seeing how the muscle fibers run and then cutting in the opposite direction. Once sliced, add the marinade packs and follow their label instructions.  You can substitute your favorite marinade and also use any meat you have or prefer.   Let marinate overnight in the fridge.  After the meat has marinated, place a pan on the stove on medium to medium high heat.  Add about a teaspoon or so of butter or your favorite cooking oil and add the marinated meat to the pan.  Cook for about 3-4 minutes, stirring as needed.  Add in your diced peppers, onions and mushrooms and add a bit of salt and pepper.  Cook for about 5 more minutes or until all meat and veggies are cooked through.  Set food to the side.  Clean that pan or get another pan to begin making the omelette.  Whip up your eggs with a little half and half, until fluffy.  Add a small bit of butter to your pan set on medium and then add in the eggs.  Add salt and pepper to taste.  Move the eggs around a little in the pan to make sure they are cooking evenly.  Once they’ve cooked about a minute or so, add in your cooked cheesesteak mixture.  Ratios depend on how many eggs you are cooking at that time.  Two eggs for one person, 10 eggs for 4 people, you get the idea.  And here’s the tricky part.  If you are making a traditional omelette, then make sure to cook and fold your omelette as you know how to do.  You can also make a scramble and not worry about the proper techniques of omelette making.  I’m sure Julia Child would approve no matter which way you choose to make this.  Cook for about 2-3 minutes, until the eggs are as done as you like and then take off the heat.  Add your cheese of choice and fold omelette onto your plate.
